Garlic Ginger (Vegan) Butter Miso Green Beans

You don't have to wonder anymore what all the fuss is about the non-vegan Green Bean Casserole. Here's a way to enjoy the snap of this favorite holiday veg, with a rich, vegan flavorful flair.


1 lb green beans, washed, trimmed, and halved
2 tbsp vegan butter, salted if possible
2 tbsp white miso paste
½ tbsp minced garlic
2 tsp grated ginger
Ground black pepper
Sesame seeds, to garnish


1. Heat a large skillet over medium heat. When hot, add the green beans and vegan butter. Saute, stirring often, until the green beans are just beginning to soften, about 5 minutes.

2. Add the white miso paste, minced garlic, grated ginger, and black pepper and stir again to combine. Saute, stirring often, for 3-4 minutes or until the ginger and garlic have cooked and the green beans are mostly tender. Remove from heat.

3. Enjoy hot with sesame seeds to garnish.
