Grilled Lemon Dill Green Beans


  • 12-16 oz green beans, washed and trimmed

  • ¼ cup extra virgin olive oil

  • ¼ cup freshly chopped dill, plus more to top

  • 1 tsp lemon zest

  • 2 tbsp lemon juice 

  • 2 small cloves garlic, grated

  • ½ tsp salt, or to taste

  • ½ tsp ground black pepper


  1. In a shallow dish, whisk together the olive oil, dill, lemon zest and juice, garlic, salt, and pepper until well combined.

  2. Place the green beans in the dish and toss to coat with the olive oil mixture. Let marinate at least 30 minutes, tossing every few minutes if possible. 

  3. Heat the grill mat or grill pan to medium high heat, about 450 degrees fahrenheit. When the surface is hot, place the green beans on the grill, letting the excess marinade drip off first.

  4. Grill for 3-4 minutes per side, rotating until nicely browned and charred in some places. Remove from the grill and serve with extra fresh dill if desired!
